Our Quinta do Carapinhal cheese is made with milk from our sheep, thistle-rennet, salt and the cheesemaker’s hands. The unique quality and flavour of our cheese derive from the quality of the milk from our flock of Serra da Estrela Bordaleira sheep. Three years on from the huge fire that ravaged our region and destroyed our sheep, we have finally managed to rebuild our flock. Today, we have 150 animals, which means that Quinta do Carapinhal cheese is being produced more regularly again.
